 Minced Beef 300g
 Tortilla Wrap 4ea
Green Pepper 1ea
 Onions 130g
 Mozzarella Cheese 70g
 Sour Cream 60g
 Salad Tomatoes 50g
 Coriander (Fresh) 12g
 Lime 1ea

Method

1. Preheat the oven to 190c/fan 180c/gas Mark 5.
2. Peel and dice the onion, then deseed ad dice the peppers.
3. Bring a tablespoon of oil to a medium heat and add the onions, peppers and beef. Saute for 5 minutes.
4. when the onion has softened and the beef is nicely browned, add the spice paste and cook for a further 2 minutes.
5. Dice the tomatoes ad roughly chop the coriander. cut the lime in half and cut one half into wedges.
6. Add half the tomatoes to the beef mix, stir, and simmer for another 10 minutes.
7. In a bowl, mix the remaining tomatoes with the coriander and squeeze in the juice from one half of the lime.
8. Spread 2 wraps on a baking sheet, divide the beef mix between them and sprinkle over with half the cheese. Cover each wrap with a second one , pressing down lightly and top with the rest of the cheese and the remaining coriander.
9. Bake  in the oven for 6-8 minutes.
10. Serve on 2 plates, top with sour cream and lime wedges.
